A paleo cucumber recipe which can be made with or without mayonnaise.
Cut off the dill stalks and chop those into tiny pieces with a little raw ginger.
Lightly toast a big bunch of dill and add heaps of sesame seeds for two minutes.
Chop a cucumber into strips. Add some mayonnaise and lime juice, then throw over the dill and sesame seeds and add salt and pepper, drizzle a teaspoon of honey over the top and mix well.
Put the lot into a bowl with a lid and shake vigourously, then mix.
The mixture should be more dry than moist for this to work well, so the sesame seeds and dill make up a large proportion.
This makes a great paleo meal – bring-a-dish dish, simple, cheap and gets lots of compliments.
